Chopped "Postelein" Salad

Chopped with my Vitamix. Postelein (very tasty little leaves - dont know how to translate) with fennel, apple, a lot of lemon juice, linseed oil, salt, pepper - a real energy booster :-)

When I read about the Vitamix the very first time, I thought: HOW ridiculus - a mixer for THIS amount of money!!! In this moment I had never ever thought that all the research about food could convince me to NEED this beautiful blendermonster.
I will love my Vitamix for ever :-)

Almondcream-Dressing

Unfortunately its always too dark already to make a picture from my newest salad:
green salad with very thinly sliced fennel, apple, add halfed cherrytomatoes, sliced chiccoree and parsley - with this dressing its really veery delicious, try this out:
1 tablespoon 100% almondcream, 1 tablespoon hemp seed oil, 1 tablespoon lemonjuice, 1 tablespoon vinegar, salt, pepper (I always mix everything by feeling - tablespoon is really just guessing...)
So far everybody loOoved this dressing :-)

my statement about food

Be always aware about what you eat - but dont make a science out of!

Our food is food for our cells - not just to fill us. This is the most important to know.
White bread with margarine and marmelade, a coffee with milk - nothing, nothing of it is healthy. Chips, Coke, sausages, milkshakes.....not ONE cell in your body needs this stuff. But you need your cells to stay healthy.

I eat fruits and vegetables as often as possible raw. But why ever and always and just and only raw??? Cooked food is not empty stuff - quite the contrary cooked food makes a lot of nutritions even more absorbable for the body. Even meat (whatever I read about) is good for our body - if we enjoy it from time to time (and of course: just and only organic).

I believe:
- fruits and vegetables (especially green smoothies!!), raw and cooked
- wild herbs
- good oils like linseed-, hempseed-, olive- and coconut oil
- cooked quinoa, buckweat, amaranth and millet
- legumes
- seeds like flax, sesam, sunflower...
- steamed or grilled meat and fish (just from time to time)
- a red wine or a beer (just from time to time)
- lots of water and green and white tea
- plus B12 supplement
and our body gets everything what he needs and deserves - to be happy, healthy and balanced!

Concerning calories: I never counted calories, I even dont have a scale. Im just listening to my body and stop eating when Im not hungry anymore. I am 44 and I always was slim. And I am not a sport maniac!

And, of course, organic food is the better decision - in the first instance politically. But if you cant efford it - dont believe vegetables from the supermarket are "empty" - its still much better than a pizza and a donat with a coke.

The question should always be: is this good food for my cells - yes or no?

And: Enjoy food. Food is life.
